Familiar Dong Quan Plain rice cake

If anyone once visited Dong Quan village, Dong Son commune, Bac Giang city, Bac Giang province, to taste the familiar Plain rice cake served with moreish soya sauce, made by processing hands of the people here, surely, they would not forget.

Plain rice cakeis a popular food in the countryside of Vietnam. Simple pure Plain rice cakeis made from rice flour mixed with clear lime water. However, each region has a different way of processing, for different flavors and also different ways to enjoy. Among them, Dong Quan plain rice cake are popular because of their softness and coolness.

To make the cakes, Dong Quan people choose delicious rice to soak for 3 days 3 nights, and change the soaking water every day , until the rice is soft at the finger tip when slightly pressing then  bring them to grind into cake flour.

Lime used to stir the cake is not the slake lime in the barrel, or in the jar but grilledquicklime blocks, then mixed with water,after that the clear lime water of that mixture is taken out to cooked with milled rice for the cake.

According to Dong Quan villagers, to have delicious cake, the most important is processing skill of cooking and stiring. Preparing a pot coved thinly with edible oil or fat, pouring the cake flour into the pot, turning your fire up, continuously stirring with a big flat chopstick so that the flour could not be curdled, not overcooked, not closed to the pot bottom or walls, must evenly and continously stir the mixture inside the pot to avoid the flour is curdled immediately. The cook fire must be small and steady to have well-done cake and avoid too over-cooked.

Depending on the experience and feeling ability of the cooker to know when the pot is nearly well done to cover it up, turning off the fire, keeping on the kitchen for a while and then puting the roasted peanuts, thin sliced coconut into the pot. Again, stirring until the powder became soft,firm and thick and the ingredients are evenly matched together, until cooker can move the big flat chopstick up and down easily without adhering to thecake. Then the cake is cooked completely.Pouring the cake cooked inside the pot on a flat basket coved with fresh green banana leaves for big round flat cake, pouring in bowls to have small round pies which can be threaded together by a bamboo string.

Looking at the piece ofivory white, glossy smoothycakewith meaty and delicous, crunchy peanut seeds so that we can not resist but hold on to enjoy right away. The cake must be served withBan soya sauce. At that time, the sweet taste of rice, the flavor of lime, the fat of coconut, the salty taste of soy sauce, all blends to create the countryside hot taste.
